I have addressed this issue before from Rambam's standpoint.

He contradicts the above citations, saying that is absurd to think that the
unverse was created just for us. "Man has an erronious idea of himself, and
believes that the whole world exists for his sake." He wrote that the
Creator intended to give existance to all beings whose existance is possible,
because existance is undoubtedly good. "And Gd saw all that He made, and
behold it was very good. (Gen. 1:31)"
