Kosher L'Pesach wines

Meir Bester asked on Monday aug. 5 (TF#62) how wine can be made kosher
l'pesach if it involves the use of yeast which is seemingly Chometz. I asked
this question to one of the members of the Herzog family of Kedem wines whom
I saw this week and he told ne that mst wines don't use yeast at all since
there is enough bacteria within the process itself for fermentation. The
wines that need yeast is made from wine yeast which they produce themselves
from the sediments, so there is no problem of Chometz. However, those who
make wine in their own homes would have to be careful about which yeast they
use. Hope this answers your interesting question.
