1. Honey in and of itself does not require a hachsher, just as fruits and
vegetables would not.
2. When Honey is processed, to make it ready for sale, it may not be
filtered properly to remove the nonkosher bees and other material, may
have had corn syrup added (which would affect its use on Pesach, may
have been filtered thru (nonkosher) gelatine screens, or may have been
processed using nonkosher materials (which were later removed but would
affect the kashrus). These possibilities could be the reason why some
honeys arrange for a hechsher.
3. Another reason some honey manufactureres arrange for a hechsher can be
because kosher is perceived as "better" and they want access to that
market.
