The most comprehensive text is "Otzar HaVikuchim", a collection of most of
the disputations over the centuries. To the best of my knowledge, the book
is out of print and has not been translated, however if you check with a
local yeshiva or kollel or Jewish library they might have a copy or a lead
on someone who does. I had to borrow one and photocopy it.
BTW, in the Ramban's account of the Barcelono disputation, which I believe
he published to set the record straight since the church's own account was
not accurate, he prefaces Christiani's remarks by quoting parshat Balak,
"Vayivtach Hashem et pi ha'aton vayi'daber" [and HaShem opened up the mouth
of the ass, and it spoke].
