Who says there are 600,000 letters in the Torah? The Artscroll Stone
Chumash gives the number of letters in the Torah, and it is not 600,000.
In fact, I believe that there are an odd number of letters in the Torah.

Of course, the debate is really meaningless, because we also know for a fact
that the Torah we have today is not the same (letter for letter) as the Torah
that, for instance, Rashi had. So, odd vs. even number of letters, which can
be changed by just losing one letter, really proves nothing.
